Former triathlete, experienced vegan chef, and fan of all things fiery, Steve Parris's passion for fresh and flavorful foods appears to know no bounds. In his role as executive chef at Fulton Bar & Grill, Parris is doing more than his fair share to support small-scale sustainable agriculture and the intimate connection between the earth and the table. He makes frequent visits to North Union Farmers Market locations on Shaker Square and in Lakewood, both to purchase fresh organic produce and to answer consumers' questions; he demonstrates healthy cooking techniques at forums throughout the city; and he designs his high-octane recipes to highlight fresh flavors while using a minimum of fats and oils. And in addition to all this good stuff, the guy makes one hell of a chocolate-chipotle brownie.
